1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 head of romaine lettuce, leaves separated

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup plain Greek yogurt

1 tablespoon tahini

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, ground cumin, coriander, paprika, turmeric, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs and coat well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for best flavor.

    Cook the Chicken: Preheat a grill or a skillet over medium-high heat. Once hot, add the marinated chicken thighs. Grill or cook for about 6-7 minutes on each side or until the chicken is fully cooked and has nice char marks. Remove from heat and let it rest for 5 minutes.

      Prepare the Sauce: In a small bowl, mix together the Greek yogurt, tahini, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.

        Assemble the Boats: Once the chicken has rested, slice it into thin strips. Take a lettuce leaf and place a few strips of chicken in the center. Top with cherry tomatoes, cucumber, and red onion slices.
