4 mini bagels (plain or whole grain)

4 large eggs

½ cup shredded sharp cheddar cheese

¼ cup diced bell peppers (any color)

¼ cup cooked and crumbled bacon (optional)

2 tablespoons milk

Salt and pepper to taste

Fresh chives or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Bagels: Slice the mini bagels in half and place them cut side up on the prepared baking sheet.

      Whisk the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
