Ingredients

1 pound ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (Italian-style for added flavor)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup marinara sauce (store-bought or homemade)

8 small sub rolls or slider buns

1 1/2 cups shredded mozzarella cheese

Olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined; avoid overmixing.

Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs: Drizzle the meatballs lightly with olive oil and bake in the preheated oven for 15-18 minutes or until cooked through and browned.

Heat the Marinara: While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warmed through.

Assemble the Subs: After the meatballs are done, take them out of the oven. Slice the sub rolls or slider buns lengthwise without fully separating them. Place 3-4 meatballs inside each roll.

Top with Sauce and Cheese: Spoon marinara sauce over the meatballs, ensuring they are nicely covered. Sprinkle shredded mozzarella cheese generously on top.

Melt the Cheese: Return the assembled mini subs back to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy: Remove from the oven, let cool for a minute, and serve hot. Enjoy your mini meatball sub sandwiches with extra marinara on the side for dipping!
