4 whole wheat tortillas

1 cup classic hummus

1 cup fresh spinach leaves, washed and dried

1 medium cucumber, sliced thin

1 small red bell pepper, sliced thin

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

2 tablespoons Kalamata olives, pitted and sliced

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper to taste

A sprinkle of dried oregano

Prepare the Filling: In a medium mixing bowl, combine the sliced cucumber, bell pepper, cherry tomatoes, red onion, Kalamata olives, and feta cheese. Drizzle with olive oil and lemon juice, then season with salt, pepper, and dried oregano. Mix gently to combine the ingredients and set aside.

    Warm the Tortillas: In a dry skillet over medium heat, warm the whole wheat tortillas, one at a time, for about 15-20 seconds on each side, just until they are pliable. This will make them easier to roll without tearing.

      Spread the Hummus: Lay one warm tortilla on a flat surface. Spread about 1/4 cup of hummus evenly across the tortilla, leaving a small border around the edges.

        Layer the Veggies: Place a handful of fresh spinach leaves over the hummus, followed by a generous portion of the prepared veggie and feta mixture.

          Roll the Wrap: Starting from one end, carefully roll the tortilla tightly around the fillings, tucking in the sides as you go to seal the wrap. Repeat this process for the remaining tortillas.

            Slice and Serve: Once all wraps are rolled, cut each wrap in half or into bite-sized pieces to create mini wraps. Arrange them on a serving platter and serve immediately, or cover and refrigerate until ready to serve.
