1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon of lemon juice added)

1 large egg

2 tablespoons melted butter or vegetable oil

Cooking spray for the waffle maker

For the Taco Filling:

4 strips of crispy bacon, chopped (or a vegetarian alternative)

4 large eggs, scrambled

1/2 cup shredded cheddar cheese (or dairy-free cheese)

1 avocado, sliced

Fresh cilantro, for garnish
