1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for topping)

2 tablespoons cream cheese, softened

1/2 teaspoon nutmeg

Fresh parsley, chopped (for garnish)

Optional: cooked chicken or broccoli for added protein and veggies

Instructions
 

Prep the Spaghetti Squash: Preheat your oven to 400°F (200°C). Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.

    Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the oven for 30-40 minutes, or until the flesh is easily pierced with a fork. Let it cool slightly, then use a fork to scrape the flesh into spaghetti-like strands and set aside.

      Make the Alfredo Sauce: In a medium saucepan over low heat, combine the heavy cream, grated Parmesan cheese, softened cream cheese, and nutmeg. Stir continuously until the cheeses melt and the sauce thickens (about 5-7 minutes). Season with salt and pepper to taste.

        Combine Nests: In a large bowl, mix the spaghetti squash strands with half of the Alfredo sauce until well coated. If using, fold in cooked chicken or broccoli for added flavor and texture.

          Form Nests: On a greased baking sheet, create small nests with the spaghetti squash mixture, using about 1/2 cup for each nest. Make a small indentation in the center of each nest for added shape and texture.

            Top & Bake: Spoon the remaining Alfredo sauce over each nest and sprinkle with extra Parmesan cheese. Bake in the preheated oven for an additional 15-20 minutes, or until the tops are golden and bubbly.
