2 medium sweet potatoes

4 large eggs

1/2 cup cooked black beans, drained and rinsed

1/2 cup diced bell peppers (red and green)

1/4 cup finely chopped red onion

1/2 teaspoon smoked paprika

1/4 teaspoon cumin

Salt and black pepper to taste

1/2 cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Hot sauce (optional)

Instructions
 

Preheat & Prep: Preheat your oven to 400°F (200°C). While the oven heats, wash the sweet potatoes thoroughly and poke holes in them with a fork to allow steam to escape.

    Bake the Sweet Potatoes: Place the sweet potatoes on a baking sheet lined with parchment paper. Bake for about 45 minutes to 1 hour, or until fork-tender. Remove from the oven and let them cool slightly.

      Prepare the Filling: In a medium mixing bowl, whisk together the eggs, then add in cooked black beans, diced bell peppers, red onion, smoked paprika, cumin, salt, and black pepper. Mix until well combined.

        Slice Open the Sweet Potatoes: Once the sweet potatoes are cool enough to handle, slice them in half lengthwise and use a fork to gently fluff the insides of the potato while leaving a little flesh intact to hold the filling.

          Fill the Boats: Line a baking dish with a little cooking oil or spray. Place the sweet potato halves cut-side up in the dish and carefully spoon the egg and vegetable mixture into each sweet potato half. (If using, sprinkle shredded cheddar cheese on top of the filling.)

            Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 15-20 minutes, or until the eggs are fully set and the tops are golden.

              Garnish & Serve: Once done, remove from the oven and let cool slightly. Garnish with fresh cilantro and serve with avocado slices on the side. Drizzle with hot sauce for an extra kick if desired.
