Mini Tuna Melt Stuffed Peppers

10 mini sweet bell peppers (any color)

1 can of tuna fish in water (drained, 5 oz)

1/4 cup mayonnaise

1/4 cup Greek yogurt (for added creaminess)

1/4 cup diced celery

1/4 cup diced red onion

1 tablespoon Dijon mustard

1/2 cup shredded cheddar cheese (plus more for topping)

1 tablespoon freshly squeezed lemon juice

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the peppers: Cut the mini sweet bell peppers in half lengthwise and remove the seeds. Arrange them on a baking sheet, cut side up.

      Make the tuna filling: In a medium mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, diced celery, diced red onion, Dijon mustard, shredded cheddar cheese, and lemon juice. Stir until all ingredients are well mixed. Season with salt and pepper to taste.

        Stuff the peppers: Using a spoon, generously fill each pepper half with the tuna mixture, packing it slightly for a good amount.

          Add extra cheese: Sprinkle additional shredded cheddar cheese on top of each stuffed pepper for an extra melty topping.
