6 large eggs

1 cup milk (preferably whole milk for creaminess)

1 cup cooked turkey bacon, chopped

1 cup shredded cheddar cheese

1 cup baby spinach, finely chopped

1/2 cup diced tomatoes (drained if using canned)

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

Cooking spray or muffin liners

Preheat Your Oven: Preheat your oven to 375°F (190°C) and prepare a mini muffin tin by spraying it with cooking spray or lining it with mini muffin liners.

    Whisk the Wet Ingredients: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until thoroughly combined and slightly frothy.

      Mix in the Fillings: Add the chopped turkey bacon, shredded cheddar cheese, baby spinach, diced tomatoes, and green onions to the egg mixture. Stir well to ensure everything is evenly distributed.

        Combine Dry Ingredients: In a separate bowl, combine the all-purpose flour, baking powder, and baking soda. Mix well to prevent clumps.

          Combine Mixtures: Gradually add the dry ingredients to the egg mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

            Fill the Muffin Tin: Spoon the batter into the prepared mini muffin cups, filling each about 3/4 full. These muffins will rise a little bit, so leave some space.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes or until the muffins are puffed and a toothpick inserted into the center comes out clean.

                Cool Down: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
