4 small whole wheat tortillas

1 cup shredded mozzarella cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn kernels (fresh or canned)

1/2 cup bell peppers, diced (any color)

1/2 cup zucchini, grated

1/4 cup red onion, finely chopped

1 tsp garlic powder

1 tsp cumin

Salt and pepper to taste

1 tbsp olive oil (for brushing)

Fresh cilantro, for garnish (optional)

Salsa or guacamole, for serving

Instructions
 

Prep the Veggies: In a mixing bowl, combine the black beans, corn, bell peppers, zucchini, and red onion. Sprinkle in garlic powder, cumin, salt, and pepper. Stir well to ensure the veggies are evenly coated with the spices.

    Assemble the Quesadillas: Place a tortilla on a clean surface. Evenly spread a portion of the veggie mixture over half of the tortilla. Top with a generous sprinkling of mozzarella cheese. Fold the tortilla in half to create a semi-circle. Repeat this step for the remaining tortillas.

      Cook the Quesadillas: In a large skillet over medium heat, add a small drizzle of olive oil. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side or until each side is golden brown and crispy, and the cheese is melted. Remove from the skillet and place on a cutting board.

        Cut and Serve: Using a sharp knife or pizza cutter, slice each quesadilla into 3-4 triangles. Arrange them on a serving plate and garnish with fresh cilantro if desired.
