Mini Zucchini Tartlets with Goat Cheese

2 medium zucchini, thinly sliced

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon dried thyme

1 package (1 sheet) puff pastry, thawed

4 oz goat cheese, softened

1/4 cup heavy cream

1 large egg

2 tablespoons fresh basil, chopped

Zest of 1 lemon

1 tablespoon honey (for drizzling)

Freshly cracked pepper (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: In a bowl, combine the zucchini slices with olive oil, salt, black pepper, and dried thyme. Let them marinate for about 10 minutes to absorb the flavors.

      Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry until it’s about 1/8 inch thick. Cut the pastry into 3-inch squares (or circles if you prefer) to fit into your mini tartlet pans.

        Line Tartlet Pans: Gently press the pastry squares into the mini tartlet pans, ensuring they cover the bottom and sides. Trim any excess hanging over the edges.

          Prepare the Filling: In a mixing bowl, whisk together the softened goat cheese, heavy cream, egg, basil, and lemon zest until smooth and well combined.

            Assemble the Tartlets: Place a few slices of the marinated zucchini into each pastry-lined tartlet pan. Pour the goat cheese mixture over the zucchini, filling each tartlet about 3/4 full.

              Bake the Tartlets: Transfer the tartlets to the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and the filling is set.

                Drizzle Honey: Remove the tartlets from the oven and allow them to cool slightly. Drizzle a little honey over each tartlet for a touch of sweetness.

                  Garnish and Serve: Finish with freshly cracked pepper on top and serve warm or at room temperature.
