Mushroom Stroganoff with Egg Noodles

12 oz egg noodles

1 lb fresh mushrooms (cremini or shiitake), sliced

1 medium yellow onion, finely chopped

3 cloves garlic, minced

1 cup vegetable broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 tablespoons olive oil

1 tablespoon butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil and butter. Once melted, add the chopped onions and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1 minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and season with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.

        Prepare the Sauce: Sprinkle the flour over the mushrooms, stirring to combine and cook for an additional minute. Slowly pour in the vegetable broth, soy sauce, and Dijon mustard, whisking to combine. Bring to a gentle simmer and cook for about 3-4 minutes until slightly thickened.

          Incorporate the Sour Cream: Remove the skillet from the heat and carefully stir in the sour cream until smooth and creamy. Taste and adjust seasoning with more salt and pepper, if necessary.
