Mushroom Swiss Cheese Meatloaf

1 pound ground beef

1 cup finely chopped mushrooms (button or cremini)

1 cup shredded Swiss cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 cup plain breadcrumbs

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

½ teaspoon dried thyme

Salt and pepper, to taste

¼ cup ketchup (plus extra for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onions and minced garlic for about 3-4 minutes until they're soft and translucent. Add in the chopped mushrooms and continue to cook for another 5 minutes, stirring occasionally, until the mushrooms are browned and most of their moisture has evaporated. Set aside to cool slightly.

      Prepare the Mixture: In a large mixing bowl, combine the ground beef, sautéed mushroom mixture, Swiss cheese, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, smoked paprika, dried thyme, salt, and pepper. Mix everything together with your hands or a spatula until well combined, but don't overmix.

        Form the Loaf: Transfer the mixture to a lightly greased loaf pan, shaping it into a loaf. Make a small indention on top of the loaf with your fingers to allow the ketchup to rest within and not slide off.

          Glaze the Meatloaf: Spread about ¼ cup of ketchup evenly over the top of the meatloaf, making sure to coat it well.

            Bake: Place the loaf pan in the preheated oven and bake for approximately 1 hour, or until the meatloaf reaches an internal temperature of 160°F (70°C).

              Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. This will help it hold its shape when sliced. After resting, slice the meatloaf, garnish with fresh parsley, and serve.
