1 cup rolled oats

½ cup almond butter (or any nut butter of choice)

½ cup shredded unsweetened coconut

¼ cup honey or maple syrup

½ cup chopped dark chocolate (or chocolate chips)

¼ cup chopped almonds

1 tsp vanilla extract

¼ tsp sea salt

Instructions
 

In a large mixing bowl, combine the rolled oats, shredded coconut, chopped almonds, and sea salt. Stir well to incorporate all the dry ingredients evenly.

    In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

      Pour the wet mixture into the dry ingredients and stir until everything is evenly coated.

        Fold in the chopped dark chocolate until distributed throughout the mixture.

          Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. If the mixture is too sticky, dampening your hands with a little water can help.

            Place the energy balls on a baking sheet lined with parchment paper.

              Once all the mixture is rolled into balls, refrigerate for at least 30 minutes to firm up.

                Store the energy balls in an airtight container in the fridge for up to one week or freeze for longer storage.
