Ingredients

1 ½ cups rolled oats

1 cup pitted dates, chopped

½ cup almond flour

½ cup almond butter (or any nut/seed butter of your choice)

1/4 cup pure maple syrup or honey

1/4 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark chocolate chips (dairy-free if needed)

2 tablespoons coconut oil

Flaky sea salt for topping (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, pitted dates, almond flour, cocoa powder, and salt. Mix until well combined.

Add Wet Ingredients: In a separate bowl, combine the almond butter, maple syrup (or honey), and vanilla extract. Stir until smooth. Pour this mixture into the dry ingredients and mix thoroughly until the oats are evenly coated.

Form the Slice: Line an 8x8 inch (20x20 cm) square baking dish with parchment paper, leaving some overhang for easier removal later. Transfer the oat mixture into the dish and press it down firmly with your hands or the back of a spatula until it’s evenly spread and compact.

Melt the Chocolate: In a small saucepan over low heat, combine the dark chocolate chips and coconut oil. Stir continuously until melted and smooth. Remove from heat and let it cool for a minute.

Spread the Topping: Pour the melted chocolate over the pressed oat base, ensuring even coverage. Use a spatula to spread it out smoothly, reaching the edges of the dish.

Chill: Sprinkle flaky sea salt on top if desired. Place the dish in the refrigerator for at least 2 hours, or until the chocolate has set completely.

Slice and Serve: Once set, lift the slice out of the pan using the parchment paper overhang. Cut into squares or rectangles, and enjoy!
