Ingredients

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

1 cup creamy peanut butter (preferably natural)

¾ cup maple syrup (or honey)

1 tablespoon vanilla extract

½ cup powdered sugar (optional for sweetness)

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil

Instructions

Prepare the Base: In a large mixing bowl, combine the graham cracker crumbs and unsweetened cocoa powder. Mix well until evenly combined.

Make the Peanut Butter Mixture: In another bowl, mix together the creamy peanut butter, maple syrup (or honey), vanilla extract, and powdered sugar (if using). Stir until smooth and well combined.

Combine Mixtures: Gradually add the peanut butter mixture to the dry ingredients and mix until you have a thick, homogeneous batter. You may find it easier to use your hands to fully combine the ingredients.

Press into Pan: Line an 8x8 inch pan with parchment paper, leaving some overhang for easy removal. Press the peanut butter mixture evenly into the bottom of the pan, using the back of a spatula to smooth it out.

Prepare the Chocolate Topping: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave in 20-30 second intervals, stirring between each until fully melted and smooth.

Spread the Chocolate: Pour the melted chocolate mixture over the pressed peanut butter layer in the pan. Use a spatula to gently spread it out evenly.

Chill the Bars: Refrigerate the bars for at least 1-2 hours, or until the chocolate topping is set and the bars are firm to the touch.

Slice and Serve: Once firm, lift the bars out of the pan using the parchment paper overhang. Cut into squares or rectangles. Enjoy these delicious, no-bake treats!
