1 cup rolled oats

1/2 cup nut butter (peanut, almond, or cashew)

1/3 cup honey or maple syrup

1/2 cup dark chocolate chips (or mini chocolate chips)

1/4 cup ground flaxseed

1/4 cup shredded coconut (unsweetened)

1/2 tsp vanilla extract

1/4 tsp sea salt

Optional: 1/4 cup chia seeds or chopped nuts for added texture

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, shredded coconut, and optional chia seeds or chopped nuts. Mix well to ensure even distribution.

    In a separate bowl, mix together the nut butter, honey or maple syrup, vanilla extract, and sea salt until smooth and well combined.

      Pour the wet ingredients into the dry ingredients. Stir until everything is thoroughly mixed. You may find it easier to use your hands to knead the mixture at this point.

        Gently fold in the dark chocolate chips until evenly distributed throughout the mixture.

          Once everything is well combined, use your hands to form the mixture into bite-sized balls (about 1 inch in diameter). If the mixture is too sticky, lightly dampen your hands with water to help roll the bites.

            Place the energy bites on a parchment-lined baking sheet or plate. Once all the bites are formed, refrigerate them for at least 30 minutes to help them firm up.

              After chilling, transfer the energy bites to an airtight container. They can be stored in the fridge for up to one week or in the freezer for up to three months.
