200g digestive biscuits, crushed

100g unsalted butter, melted

2 Tbsp granulated sugar

For the Caramel Layer:

397g can of sweetened condensed milk

75g unsalted butter

100g light brown sugar

2 Tbsp corn syrup (or golden syrup)

A pinch of sea salt

For the Chocolate Topping:

200g dark chocolate (about 70% cocoa), chopped

100g milk chocolate, chopped

Sea salt for garnish

Instructions
 

Prepare the Base:

    - In a mixing bowl, combine the crushed digestive biscuits, melted butter, and granulated sugar. Stir until well combined.

      - Press the mixture firmly into the bottom of a 9-inch square baking pan lined with parchment paper, ensuring it is compact and even. Place in the fridge to set while you prepare the caramel layer.

        Make the Caramel:

          - In a medium saucepan, combine the sweetened condensed milk, unsalted butter, light brown sugar, corn syrup, and a pinch of sea salt. Stir continuously over medium heat until the mixture comes to a gentle boil.

            - Reduce the heat to low, continuing to stir for about 5-7 minutes until the caramel thickens and turns a lovely golden color. Be careful to avoid burning the caramel.

              - Pour the caramel over the chilled biscuit base, spreading it evenly. Tap the pan gently on the counter to remove any air bubbles. Return to the fridge for about 1 hour, or until the caramel layer is set.

                Prepare the Chocolate Topping:

                  - In a heatproof bowl, melt the dark and milk chocolate together. You can do this in the microwave in 30-second intervals, stirring between each, or over a double boiler.

                    - Once melted and smooth, pour the chocolate over the chilled caramel layer, spreading it evenly with a spatula.

                      Finish and Chill:
