No-Bake S’mores Bars

Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup brown sugar, packed

1 cup unsalted butter, melted

1 teaspoon vanilla extract

1 ½ cups mini marshmallows

1 cup semisweet chocolate chips

½ cup mini chocolate chips (for topping)

½ cup crushed graham crackers (for topping)

Instructions
 

Prepare the Pan: Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later. Lightly grease the paper with cooking spray.

    Create the Base: In a large mixing bowl, combine graham cracker crumbs, cocoa powder, and brown sugar. Mix well until fully combined.

      Add Wet Ingredients: Pour the melted butter and vanilla extract into the dry mixture. Stir until everything is evenly coated and forms a crumbly dough.

        Layer the Mixture: Press half of the crumb mixture firmly into the bottom of the prepared pan. Ensure it’s packed tightly to form a stable base.

          Melt the Chocolate: In a microwave-safe bowl, combine the semisweet chocolate chips and a tablespoon of butter (optional). Microwave in 30-second intervals, stirring in between, until melted and smooth.

            Bring it All Together: Pour the melted chocolate over the pressed crumb base, spreading it evenly. Then, sprinkle the mini marshmallows on top of the chocolate layer.

              Add the Remaining Crumb Mix: Take the rest of the crumb mixture and sprinkle it evenly over the marshmallows, pressing down lightly for cohesion.

                Chill: Cover the pan with plastic wrap or foil and refrigerate for at least 2 hours, or until the bars are firm and set.

                  Finish with Toppings: Once set, remove the bars from the pan using the parchment overhang. Sprinkle the mini chocolate chips and crushed graham crackers on top for extra deliciousness.
