For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

¾ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

Zest of 1 lemon

For the strawberry layer:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

2 tablespoons water

For garnish:

Fresh strawberries

Whipped cream (optional)

Prepare the crust:

    - In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until evenly combined.

      - Press the mixture into the bottom of a 9x9 inch (or similar) baking dish to create an even layer. Use the back of a measuring cup or your fingers to pack it down tightly.

        - Place the crust in the refrigerator while you prepare the filling.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and well combined. Scrape down the sides as necessary.

              - In a separate mixing bowl, whip the heavy cream until soft peaks form. Gently fold this whipped cream into the cream cheese mixture until fully incorporated.

                - Add in the lemon zest and mix until just combined.

                  Assemble the cheesecake layer:

                    - Take the crust out of the refrigerator and carefully spread the cheesecake filling over the crust, smoothing the top with a spatula.

                      - Cover with plastic wrap and place in the fridge while you make the strawberry layer.

                        Prepare the strawberry layer:
