Ingredients

1 cup graham cracker crumbs

1/3 cup unsalted butter, melted

1/4 cup granulated sugar

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/4 cup caramel sauce (plus extra for drizzling)

1/4 cup chopped pecans

1/4 cup chocolate chips (milk or dark, your choice)

Instructions

Make the crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the mixture resembles wet sand. Divide the crust mixture evenly into the bottom of a mini cheesecake mold or silicone muffin liners, pressing down firmly to create an even layer.

Prepare the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined and creamy.

Whip the cream: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a light and airy filling.

Add caramel and pecans: Stir in the caramel sauce and chopped pecans into the cheesecake mixture until evenly distributed.

Assemble the cheesecakes: Spoon the cheesecake filling over the prepared crust in the muffin liners, filling each to the top. Smooth the tops with a spatula.

Chill: Place the mini cheesecakes in the refrigerator for at least 4 hours, or until set. For best results, chill overnight.

Serve: Once set, carefully remove the mini cheesecakes from the molds. Drizzle extra caramel sauce over the tops and sprinkle with chocolate chips.

Enjoy: Serve chilled and enjoy the rich, creamy flavor coupled with the delightful crunch of pecans and the sweetness of caramel!
