1 lb boneless, skinless chicken breast, sliced into thin strips

2 cups fresh green beans, trimmed

1 red bell pepper, sliced thin

3 cloves garlic, minced

1 inch fresh ginger, grated

2 tablespoons soy sauce (low-sodium preferred)

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil (for stir-frying)

1 tablespoon cornstarch

1 tablespoon water

Salt and pepper to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Prepare the Chicken: In a bowl, combine the sliced chicken with soy sauce, oyster sauce, and a pinch of salt and pepper. Let it marinate for about 15 minutes to enhance the flavor.

    Mix Cornstarch Slurry: In a small bowl, mix the cornstarch and water until smooth. Set aside this slurry as it will help thicken the stir-fry sauce later.

      Blanch the Green Beans: Bring a pot of salted water to a boil and add the green beans. Blanch them for about 2-3 minutes until they are bright green and slightly tender. Drain and rinse under cold water to stop the cooking process. Set aside.

        Stir-Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken strips and stir-fry for about 5-7 minutes until fully cooked and golden brown. Remove the chicken from the pan and set it aside.

          Sauté Vegetables: In the same skillet, add sesame oil, minced garlic, and grated ginger. Stir for about 30 seconds until fragrant. Then, add the sliced red bell pepper and blanched green beans. Stir-fry for an additional 3-4 minutes until the vegetables are just tender but still crisp.

            Combine and Thicken: Return the cooked chicken to the skillet with the vegetables. Stir in the cornstarch slurry and mix well. Allow it to cook for another minute until the sauce thickens and coats the chicken and vegetables evenly.

              Final Touches: Taste and adjust the seasoning with more soy sauce or salt if necessary. Sprinkle chopped green onions and sesame seeds on top for garnish.
