Old-Fashioned Amish Beef and Potato Casserole

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, thinly sliced

1 cup shredded carrots

1 cup corn (frozen or fresh)

2 cups beef broth

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 cup shredded cheddar cheese (optional)

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until the onions are translucent, about 3-5 minutes.

      Add Ground Beef: Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess grease if necessary.

        Season: Stir in the thyme, paprika, salt, and black pepper into the beef mixture. Remove from heat.

          Layer the Ingredients: In a greased 9x13 inch casserole dish, layer half of the sliced potatoes at the bottom. Spread half of the beef mixture on top, followed by the shredded carrots and corn. Layer the remaining potatoes over the vegetables and finish with the rest of the beef mixture on top.

            Add Broth: Carefully pour the beef broth evenly over the casserole, ensuring it seeps through the layers.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 1 hour.

                Uncover and Add Cheese: After 1 hour, remove the foil and sprinkle the shredded cheddar cheese on top if desired. Bake uncovered for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly.

                  Rest and Serve: Let the casserole rest for about 10 minutes before serving. Garnish with chopped fresh parsley if desired.
