2 boneless, skinless chicken breasts (about 1 pound)

Salt and pepper, to taste

4 tablespoons olive oil, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

8 ounces linguine or fettuccine pasta

2 tablespoons fresh parsley, chopped

Juice of 1 lemon

Lemon slices, for garnish

Cook the Pasta: Begin by cooking the linguine or fettuccine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper on both sides.

      Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes, then slice it into strips.

        Make the Scampi Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 1 minute, or until the garlic is fragrant. Be careful not to burn it.

          Add Broth and Cream: Add the red pepper flakes, chicken broth, and heavy cream to the skillet. Stir and bring the mixture to a gentle simmer, cooking for about 3-5 minutes until slightly thickened.

            Incorporate Cheese and Pasta: Gradually whisk in the Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a bit of the reserved pasta water until you achieve your desired consistency. Toss in the cooked pasta to evenly coat it in the sauce.

              Finalize with Chicken: Add the sliced chicken back to the skillet with the pasta and sauce. Squeeze in the lemon juice and toss everything together gently. Cook for an additional 2-3 minutes to heat through.
