1 cup all-purpose flour

1/2 cup granulated sugar

1/3 cup brown sugar, packed

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 tsp vanilla extract

1/2 cup semi-sweet chocolate chips (plus extra for topping, optional)

1/4 cup chopped walnuts or pecans (optional)

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare the zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or a few layers of cheesecloth. Squeeze out the excess moisture to ensure the bread doesn't turn out soggy.

      Mix dry ingredients: In a large bowl, combine the all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Whisk them together until well combined.

        Combine sugars and wet ingredients: In a separate bowl, whisk together the granulated sugar, brown sugar, and vegetable oil. Add the eggs and vanilla extract, mixing until everything is well incorporated.

          Stir in zucchini: Fold the grated zucchini into the wet mixture until evenly distributed.
