1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes

2 large apples (e.g., Honeycrisp or Granny Smith), cored and sliced

1 medium red onion, sliced

3 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon cayenne pepper (optional, for a kick)

Salt and black pepper to taste

1/4 cup chopped pecans or walnuts (optional)

Fresh thyme or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).
