One-Pan Cheesy Beef and Rice Casserole

1 lb ground beef

1 cup long-grain white rice (unwashed)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chiles

2 cups beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh cilantro or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large oven-safe skillet or pan over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Aromatics: Add the diced onion to the pan with the beef and sauté for 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Mix Ingredients: To the beef mixture, add the rice, diced tomatoes (with juice), beef broth, paprika, oregano, salt, and black pepper. Stir well to combine everything evenly.
