1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 cup long-grain white rice, uncooked

2 cups beef broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 cup frozen peas (optional)

2 cups shredded cheddar cheese

Fresh parsley, for garnish (optional)

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the beef: In a large oven-safe skillet or pan, over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.

      Sauté the aromatics: Add the chopped onion and minced garlic to the skillet with the cooked beef. Stir and cook for another 3-4 minutes, until the onion is translucent.

        Mix in the rice: Stir in the rice, cooking for an additional 1-2 minutes to slightly toast it. This adds flavor!

          Combine the liquids: Pour in the beef broth and add the can of diced tomatoes (with their juice). Stir in the Italian seasoning, smoked paprika, salt, and black pepper. Bring the mixture to a simmer.

            Add peas and cheese: If using, stir in the frozen peas. Remove the skillet from heat and sprinkle 1 ½ cups of shredded cheddar cheese over the top, reserving the remaining cheese for later.

              Cover and bake: Cover the skillet with a lid or aluminum foil, and place it in the preheated oven. Bake for 25-30 minutes or until the rice is tender and has absorbed most of the liquid.

                Cheesy finish: Remove the skillet from the oven. Carefully uncover it and sprinkle the remaining ½ cup of cheese on top. Return to the oven uncovered for an additional 5-7 minutes, or until the cheese is melted and bubbly.
