1 lb ground beef (80/20)

1 cup long-grain white rice

1 medium onion, diced

1 bell pepper, diced (any color)

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

2 cups beef broth

1 cup frozen mixed vegetables (peas, corn, carrots)

2 tsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

1 ½ cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain excess fat if necessary.

    Sauté the Vegetables: To the skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.

      Season: Add the chili powder, cumin, paprika, salt, and pepper. Stir well to combine the spices with the beef and vegetables.

        Add Rice and Liquid: Stir in the rice. Then pour in the diced tomatoes (with their juices) and beef broth. Bring the mixture to a boil.
