1 lb ground beef

1 cup long-grain white rice

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) diced tomatoes (with juice)

2 cups beef broth

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break it up with a spatula as it cooks.

    Add Aromatics: Stir in the diced onion, garlic, and bell pepper. Sauté until the vegetables have softened, about 3-4 minutes.

      Incorporate Rice and Spices: Add the uncooked rice to the skillet, stirring well to coat the rice in the beef mixture. Sprinkle in the smoked paprika, oregano, cumin, salt, and pepper, mixing everything together.

        Add Tomatoes and Broth: Pour in the can of diced tomatoes (with their juice) and the beef broth. Stir to combine. Bring the mixture to a simmer.
