Ingredients
  

1 cup long-grain white rice

2 cups vegetable broth (or chicken broth)

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1 tablespoon olive oil

1/2 cup heavy cream (optional for extra creaminess)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat and Sauté:

    Preheat your oven to 375°F (190°C). In a large oven-safe skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until soft and translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Combine Rice and Broth:

        Add the rice to the skillet and stir it around to coat with the oil and aromatics for about 1 minute. Pour in the vegetable or chicken broth and bring it to a simmer. Season the mixture with salt, black pepper, garlic powder, onion powder, and paprika.

          Add Broccoli:

            Once the broth is simmering, add the fresh broccoli florets to the pan. Stir everything together gently to combine.

              Cheesy Goodness:

                Remove the skillet from heat. Stir in 1 cup of shredded cheddar cheese and 1/2 cup of grated Parmesan cheese until melted and well mixed. If you prefer creamier rice, stir in the heavy cream at this point.

                  Bake:

                    Transfer the skillet to the preheated oven and bake uncovered for about 25-30 minutes or until the rice is tender and the liquid has been absorbed.

                      Top with Cheese:
