Ingredients

1 cup orzo pasta

2 cups vegetable broth

1 cup fresh corn kernels (or frozen)

1 medium zucchini, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream (or coconut cream for a vegan version)

1 teaspoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese (optional)

Instructions

Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Cook the Vegetables: Add the diced zucchini and corn to the skillet. Sauté for about 5-7 minutes, or until the zucchini is slightly tender. Season with salt, pepper, and oregano for extra flavor.

Add the Orzo: Stir in the orzo pasta, ensuring it is coated with the oil and mixed well with the veggies.

Pour in the Broth: Pour in the vegetable broth and bring it to a gentle boil. Reduce heat to low and cover the skillet with a lid. Let it simmer for about 8-10 minutes, stirring occasionally, until the orzo absorbs the liquid and becomes al dente.

Make it Creamy: Once the orzo is cooked, stir in the heavy cream (or coconut cream). Mix well and let it simmer uncovered for an additional 2-3 minutes until the cream is heated through and slightly thickened.

Serve: Remove from heat. Taste and adjust seasoning with more salt and pepper if necessary. Garnish with fresh basil leaves and a sprinkle of Parmesan cheese, if desired.

Enjoy!: Serve warm and enjoy your creamy, comforting dish straight from the pan!
