1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Cooked rice or quinoa, for serving (optional)

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt and pepper to taste.

    Cook the Asparagus: In a large skillet or pan, melt 2 tablespoons of butter over medium-high heat. Once the butter is melted and bubbling, add the asparagus pieces. Sauté for about 3-4 minutes until the asparagus is tender but still crisp. Remove the cooked asparagus from the pan and set aside.

      Sauté the Shrimp: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, until fragrant but not browned.

        Add the Shrimp: Introduce the seasoned shrimp into the pan with the garlic and butter. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.

          Combine & Flavor: Return the asparagus to the skillet with the cooked shrimp. Add the lemon zest and squeeze the juice from the lemon over the top. Toss everything together gently to combine and heat through. Taste and adjust seasoning with more salt and pepper if necessary.

            Serve: Garnish with fresh parsley before serving. For a complete meal, serve the shrimp and asparagus over a bed of cooked rice or quinoa.
