One-Pan Lemon Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

4 cloves garlic, minced

1 large lemon (zested and juiced)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon paprika

Salt and pepper, to taste

1 cup chicken broth

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Pat the Chicken Dry: Use paper towels to pat the chicken thighs dry. This helps achieve a crispy skin.

      Season the Thighs: In a small bowl, mix together the minced garlic, lemon zest, lemon juice, thyme, rosemary, paprika, salt, and pepper.

        Marinate the Chicken: Rub the seasoning mixture generously all over the chicken thighs, ensuring you get under the skin as well. Let them marinate for at least 15 minutes while the oven preheats (or up to 2 hours for more flavor).

          Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip them over and sear for an additional 3 minutes.

            Add Broth and Transfer to Oven: Pour the chicken broth around the thighs in the skillet, and then transfer the skillet to the preheated oven.

              Bake: Bake in the oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear. The skin should be crispy and the broth will make a flavorful sauce.

                Rest and Serve: Remove the skillet from the oven and let the chicken rest for about 5 minutes before serving. Garnish with fresh parsley and serve with lemon wedges on the side.
