Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

1 teaspoon paprika (optional for added flavor)

Instructions

Prepare the Shrimp: In a bowl, toss the shrimp with lemon zest, half of the lemon juice, red pepper flakes, salt, pepper, and paprika (if using). Let it marinate while you prepare the asparagus.

Sauté the Asparagus: In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Add the asparagus pieces and sauté for about 3-4 minutes, until they start to become tender but still have a slight crunch. Season with salt and pepper. Remove the asparagus from the pan and set aside.

Cook the Shrimp: In the same pan, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it. Add the marinated shrimp to the pan in a single layer. Cook for 2-3 minutes on one side, then flip them over and cook for another 2-3 minutes, or until the shrimp is pink and opaque.

Combine: Return the asparagus back to the pan with the shrimp. Add the remaining lemon juice and toss everything gently to combine. Cook for an additional minute to heat through.

Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately, either on its own or over rice or pasta for a more filling meal.
