Ingredients

2 cups elbow macaroni

4 cups vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup balsamic vinegar

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Crushed red pepper flakes for added heat

Instructions

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add garlic powder and onion powder, stirring for about 30 seconds until fragrant.

Add Liquids and Pasta: Pour in the vegetable broth and balsamic vinegar. Stir to combine. Once the mixture begins to simmer, add the elbow macaroni. Stir well, ensuring the pasta is submerged in the liquid.

Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

Incorporate Cream and Cheese: Once the pasta is cooked, reduce the heat to low. Slowly stir in the heavy cream, followed by the shredded cheddar and mozzarella cheese. Mix thoroughly until the cheese melts and the sauce becomes creamy.

Season and Serve: Taste and season with salt, pepper, and dried basil. If you desire extra heat, sprinkle in some crushed red pepper flakes. Serve hot, garnished with fresh basil leaves.

Enjoy: This hearty, tangy dish combines the richness of cheese with a hint of balsamic sweetness for a unique twist on a classic mac and cheese.
