One-Pot Cheesy Beef and Rice Casserole

1 lb (450g) ground beef

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup (200g) long-grain rice, rinsed

2 cups (480ml) beef broth

1 can (15 oz/425g) diced tomatoes, undrained

1 cup (240ml) milk

1 tsp smoked paprika

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

2 cups (200g) shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Beef: In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, for about 5-7 minutes. Drain excess fat if necessary.

    Add Vegetables: Stir in the diced onion, garlic, and bell pepper. Sauté for an additional 3-4 minutes until the onion is translucent and the peppers are tender.

      Combine Ingredients: Add in the rinsed rice, beef broth, diced tomatoes (with juice), milk, smoked paprika, oregano, salt, and black pepper. Stir well to combine all ingredients.

        Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Add Cheese: Once the rice is tender, remove the pot from heat and sprinkle the shredded cheddar cheese over the top. Cover with a lid for 3-5 minutes to allow the cheese to melt.

            Garnish and Serve: After the cheese is melted and bubbly, remove the lid, garnish with chopped fresh parsley, and serve hot. Enjoy your hearty, cheesy casserole!
