1 lb (450g) ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 can (15 oz) diced tomatoes with green chilies, undrained

2 cups chicken or beef broth

8 oz (about 2 cups) elbow macaroni or rotini pasta

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained (optional)

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and sliced jalapeños (for serving, optional)

Instructions
 

Sauté the Meat: In a large pot or Dutch oven over medium heat, cook the ground beef or turkey until browned. Drain any excess fat if necessary.

    Add Aromatics: Stir in the diced onion and minced garlic. Cook for about 3-5 minutes, until the onion becomes translucent.

      Season It Up: Sprinkle the taco seasoning over the meat mixture and stir to coat evenly.

        Incorporate Liquids: Pour in the diced tomatoes (with their juices) and broth. Stir well to combine.
