2 boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

8 oz (about 2 cups) penne pasta

4 cups chicken broth

1 cup diced tomatoes (canned or fresh)

1 cup corn kernels (frozen or fresh)

1 cup shredded Mexican blend cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, chili powder, cumin, and paprika. Cook until the chicken is browned and fully cooked, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same pot, add the sliced onions and bell peppers. Sauté for about 3-4 minutes until the vegetables begin to soften. Then, add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Return the cooked chicken to the pot. Add the penne pasta, chicken broth, diced tomatoes, and corn. Stir everything together until well combined.

        Simmer: Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Simmer for about 12-15 minutes, or until the pasta is al dente and has absorbed most of the liquid, stirring occasionally.
