1 lb (450g) boneless, skinless chicken breasts, diced

12 oz (340g) penne pasta

3 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Instructions
 

Sauté the Chicken: In a large pot, heat olive oil over medium heat. Season the diced chicken with salt, pepper, and Italian seasoning. Add the chicken to the pot and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes, until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add Pasta and Broth: Stir in the uncooked penne pasta, alongside the chicken broth. Bring to a gentle boil, then reduce to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.

        Stir in Cream and Chicken: Once the pasta is cooked, reduce the heat to low. Pour in the heavy cream and mix well. Add the cooked chicken back into the pot along with the chopped spinach. Stir until the spinach wilts and the dish is well combined.

          Finish with Cheese: Gradually stir in the grated Parmesan cheese until creamy and fully melted. Taste and adjust seasoning with extra salt, pepper, or red pepper flakes as desired.
