12 oz (340g) fettuccine or your choice of pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

16 oz (450g) baby bella (cremini) mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

4 cups vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese (plus extra for serving)

1/4 cup fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Mushrooms: Add the sliced mushrooms to the pot. Sauté for about 8-10 minutes, or until the mushrooms are browned and have released their moisture. Stir in the dried thyme, oregano, and red pepper flakes, mixing well to combine.

      Add the Pasta and Broth: Pour in the vegetable broth and add the fettuccine (or chosen pasta) to the pot. Stir to combine, making sure the pasta is mostly submerged in the broth. Bring to a gentle boil.

        Simmer the Pasta: Reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and the broth has thickened slightly.
