One Pot Salmon Pasta

12 oz (340g) linguine or spaghetti

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup vegetable or fish stock

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)

1 pound (450g) salmon fillets, skin removed and cut into bite-sized pieces

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes, until it becomes translucent.

    Stir in the minced garlic and cook for another 30 seconds until fragrant.

      Add the halved cherry tomatoes to the pot, cooking for about 2 minutes until they start to soften and release their juices.

        Pour in the vegetable or fish stock and bring to a gentle simmer. Once simmering, add the linguine or spaghetti to the pot. Stir occasionally, cooking according to the package instructions until al dente (usually 8-10 minutes).

          As the pasta cooks, drizzle in the heavy cream. Mix well and allow the pasta to absorb the flavors, stirring occasionally to prevent sticking.

            Once the pasta is cooked, gently fold in the salmon pieces, lemon zest, lemon juice, and dried or fresh basil. Continue to cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Season the pasta with salt and pepper to taste. If needed, adjust the creaminess by adding a splash more cream or a bit of pasta water.

                Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese.
