Ingredients

12 oz (340g) penne pasta

8 oz (225g) spicy Italian sausage, casings removed

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken or vegetable broth

1 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning

2 tbsp olive oil

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the spicy sausage and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

Add Vegetables: Stir in the diced onion, red bell pepper, and zucchini. Sauté for an additional 3-4 minutes until the vegetables are slightly softened. Add the minced garlic and cook for another minute until fragrant.

Incorporate Pasta and Liquids: Add the uncooked penne pasta, diced tomatoes (with their juices), chicken or vegetable broth, red pepper flakes, Italian seasoning, and a pinch of salt and pepper. Stir everything together until well combined.

Cook the Pasta: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 12-15 minutes, stirring occasionally until the pasta is al dente and most of the liquid is absorbed.

Add Cream and Cheese: Remove the pot from heat and stir in the heavy cream and grated Parmesan cheese. Mix until creamy and smooth. Taste and adjust the seasoning if necessary.

Serve: Garnish with fresh basil leaves and additional Parmesan cheese, if desired. Enjoy your delicious, one-pot spicy sausage pasta!
