12 oz (340g) spaghetti or linguine

1 can (14 oz) diced tomatoes with juices

4 cups vegetable broth

3 cloves garlic, minced

1 medium onion, chopped

1 tsp red pepper flakes (optional)

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

1 cup fresh basil leaves, roughly chopped

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Additional basil leaves for garnish

Lemon wedges for serving (optional)

Instructions
 

Prep Ingredients: Start by chopping the onion, mincing the garlic, and roughly chopping the basil leaves. Set aside.

    Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Add the spaghetti (or linguine) to the pot along with the can of diced tomatoes (with their juices), vegetable broth, salt, and black pepper. Ensure that the pasta is submerged in the liquid.

        Cook the Pasta: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and cook for about 10-12 minutes, stirring occasionally. Continue cooking until the pasta is al dente and most of the liquid is absorbed.

          Add Fresh Basil & Cheese: Remove the pot from the heat and stir in the chopped basil and grated Parmesan cheese. Mix well until creamy and combined. Taste and adjust seasoning if necessary.
