One-Pot Zucchini Cookies Mac and Cheese

1 cup elbow macaroni

2 medium zucchinis, grated

2 cups shredded sharp cheddar cheese

1 cup milk

1/2 cup sour cream

1/4 cup grated Parmesan cheese

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs

Fresh parsley for garnish (optional)

Instructions
 

Sauté Zucchini: In a large pot or skillet over medium heat, melt the butter. Add the grated zucchini and sauté for about 3-4 minutes until slightly softened. Remove half the zucchini and set aside for later.

    Cook Macaroni: Add the elbow macaroni to the pot with the remaining zucchini. Pour in enough water to cover the pasta (approximately 2 cups). Season with salt and bring to a boil. Cook according to package instructions until al dente.

      Create Cheese Sauce: Once the macaroni is cooked, drain any excess water. Reduce heat to low, and stir in the milk, sour cream, garlic powder, onion powder, paprika, and 1 1/2 cups of cheddar cheese. Cook until the cheese is melted and the sauce is creamy. If the mixture is too thick, add a little more milk to reach desired consistency.

        Combine & Add Zucchini: Fold in the reserved sautéed zucchini and season with salt and pepper to taste. Stir until everything is well combined.

          Add Toppings: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish. Sprinkle the remaining cheddar cheese and the breadcrumbs evenly over the top.

            Bake: Place the baking dish in the oven and bake for 15-20 minutes, or until the top is golden and bubbly.
