1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

8-10 mini breakfast sausages (or your preferred sausage)

Maple syrup, for serving

Cooking spray or oil, for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or oil.

    Prepare the Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well blended. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

      Cook the Sausages: In a skillet over medium heat, cook the mini sausages until they're browned and cooked through (about 6-8 minutes). Once done, let them cool for a minute and then cut each sausage into halves or thirds, depending on their size.

        Fill the Muffin Tin: Spoon a tablespoon of pancake batter into each greased muffin cup to fill them about 1/3 full. Then, gently press a piece of cooked sausage into the center of each batter-filled cup.

          Add More Batter: Top each sausage-filled cup with a bit more pancake batter until each cup is about 2/3 full.

            Bake: Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until the bites are golden brown and cooked through. You can check for doneness by inserting a toothpick into the center; it should come out clean.

              Cool and Serve: Let the pancake sausage bites cool in the tin for a few minutes before removing them. Serve warm with maple syrup for dipping.
