Ingredients

1 package (12 oz) refrigerated cheese tortellini

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably Italian seasoned)

2 large eggs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Olive oil (for frying)

Fresh parsley, chopped (for garnish)

Marinara sauce (for dipping, optional)

Instructions

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and let cool slightly.

Prepare Breading Stations: Set up three shallow bowls. In the first bowl, place the all-purpose flour mixed with a pinch of salt and pepper. In the second bowl, whisk the eggs until well combined. In the third bowl, mix the breadcrumbs with the grated Parmesan cheese, garlic powder, and onion powder.

Bread the Tortellini: Take each tortellini and coat it first in the flour, shaking off excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, roll it in the breadcrumb and Parmesan mixture, pressing gently to adhere well. Repeat with all tortellini.

Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom of the pan by about 1/4 inch. Heat over medium heat until shimmering but not smoking.

Fry the Tortellini: Working in batches, carefully add the breaded tortellini to the hot oil. Fry for about 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer fried tortellini to a paper towel-lined plate to absorb excess oil.

Serve: Arrange the crispy tortellini on a serving platter, garnish with freshly chopped parsley, and serve warm with marinara sauce on the side for dipping.
