4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup fresh basil leaves, roughly chopped

3 cloves garlic, minced

1 medium onion, thinly sliced

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Optional: Crumbled feta cheese for topping

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for about 5-6 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the sliced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Add Peaches and Broth: Incorporate the sliced peaches into the skillet and stir them gently for about 2 minutes. Pour in the chicken broth, balsamic vinegar, and honey. Bring the mixture to a simmer.

          Combine Ingredients: Return the seared chicken breasts back into the skillet, nestling them among the peach mixture. Lower the heat and allow it to simmer for 8-10 minutes, letting the chicken absorb the sauce flavors while the peaches soften.

            Finish with Basil: Just before serving, stir in the fresh basil leaves and let them wilt for about a minute. Taste the sauce and adjust seasonings if needed.
