Peach Chicken Tacos

2 large chicken breasts, boneless and skinless

2 ripe peaches, diced

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional: avocado slices and feta cheese for topping

Marinate the Chicken: In a bowl, combine the olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Let it sit for at least 30 minutes (or refrigerate for up to 2 hours for deeper flavor).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing into strips.

      Sauté the Vegetables: In a skillet over medium heat, add a little more olive oil if needed. Sauté the chopped onions for about 2-3 minutes until they become translucent. Add in the minced garlic and diced red bell pepper and cook for an additional 2-3 minutes, until the pepper is slightly tender.

        Add the Peaches: Toss diced peaches into the skillet with the sautéed vegetables and gently stir for about 1-2 minutes until they are warmed through but retain their shape. Season with salt and pepper to taste.

          Assemble the Tacos: Warm the corn tortillas in a dry skillet or directly on the grill for about 30 seconds on each side until pliable. On each tortilla, layer some sliced grilled chicken, the peach and vegetable mixture, and top with fresh cilantro. If desired, add avocado slices and crumbled feta cheese for extra flavor.
