2 cups fresh peaches, peeled and diced

1 cup heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

3/4 teaspoon lemon juice

For the Crumble Topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

Instructions
 

Prepare the Peach Base:

    - In a medium bowl, combine the diced peaches with 2 tablespoons of sugar and the lemon juice. Let it sit for about 10 minutes to macerate and release juices.

      - In a blender or food processor, blend the macerated peaches until smooth but still slightly chunky. Set aside.

        Make the Ice Cream Base:

          - In a large bowl, whisk together the heavy cream, whole milk, the remaining sugar (about 1/2 cup), vanilla extract, and salt until the sugar dissolves.

            - Gently fold the peach puree into the cream mixture until well combined.

              Chill the Mixture:

                - Cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours, or up to overnight, until thoroughly chilled.

                  Prepare the Crumble Topping:

                    - Preheat the oven to 350°F (175°C).

                      - In a mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Pour in the melted butter, mixing until the mixture resembles coarse crumbs.

                        - Spread the crumble mixture on a baking sheet lined with parchment paper. Bake for 10-12 minutes, stirring halfway through, until golden brown and crispy. Remove from oven and let cool.
